Quinoa with Brown Rice

Ingredients :
- Boiled brown rice : 1/2 cup
- Boiled quinoa : 1/2 cup
- Boiled whole masoor or black beans : 1/2 cup
- Boiled corn : 2 tablespoons
- Finely chopped carrot : 2 teaspoons
- Chopped capsicum ; 2 teaspoons
- Chopped and boiled french beans : 2 teaspoons
- Chopped cabbage : 2 teaspoons
- Chopped spring onion : 2 teaspoons (optional)
- Chopped garlic : 2 table spoons
- Chopped ginger : 1/2 teaspoon
- Chopped coriander leaves : 2 table spoons
- Lemon juice : 1 & 1/2 teaspoons
- Lemon zest : 1/4 teaspoon (optional)
- Roasted pumpkin seeds : 1 & 1/2 teaspoons
- Roasted sesame seeds
- Salt to taste
- Red chili paste or chili flakes : 1 & 1/2 teaspoons
- Pepper powder : 1/4 teaspoon
- Olive oil : 1 & 1/2 teaspoons
- Roasted Sesame oil for garnishing : 1 teaspoon (optional)
Serves : 2
Preparation time : 10 minutes
Cooking time : 5 minutes
Preparation:
- Heat oil in a cooking pan, add garlic, ginger and saute until brown in color.
- Add corn, capsicum french beans, carrots to the pan and cook for few seconds.
- Add cabbage, spring onions, salt, chili paste, lemon zest to the pan and stir on high flame.
- Add rice, quinoa, masoor, lemon juice, pepper powder, roasted sesame seeds and pumpkin seeds.
- Turnoff the heat, arrange the mixture in serving plate and garnish with coriander leaves.
- Sprinkle pumpkin seeds and roasted sesame oil on the mixture.
Note : This is healthy meal. You can prepare all ingredients before 3 hours and refrigerate.
