Brown Rice & Corn Grilled Sandwich

Ingredients :
- Boiled and roughly crushed yellow corn : 2 cups
- Boiled brown rice : 1/2 cup
- Chopped spring onion : 1/4 cup
- Chopped spinach : 1/4 cup
- Chopped garlic : 2 tablespoons
- Chopped ginger : 1 & 1/2 teaspoons
- Chopped green chili : 2
- Red chili paste : 1 & 1/2 teaspoons
- Salt to taste
- Tomato ketchup : 1 & 1/2 teaspoons
- Mexican herbs : 1 teaspoon
- Oregano : 1 & 1/2 teaspoons
- Chopped coriander leaves : 2 teaspoons
- Olive oil : 1 & 1/2 teaspoons
- Brown Sandwich bread
- Butter or olive oil for grill
Serves : 3 to 4
Preparation time : 10 minutes
Cooking time : 5 minutes
Preparation :
- Cut bread slices in round shape.
- Heat oil in a cooking pan and add garlic to it. Cook until brown in color.
- Add ginger and saute for few seconds, add corn.
- Cook the mixture for 2 minutes and then add spinach, spring onions, green chilies, salt and red chili paste.
- Add rice, Mexican herbs and oregano in it and stir properly.
- Remove from heat and let it cool.
- Sprinkle some coriander leaves on the mixture. Apply butter on one side of bread slice, keep stuffing on the other bread slice and cover it.
- Apply butter/olive oil on the top and grill it until crispy or well done.
- Garnish with tomato ketchup.
