Pav Bhaji Paratha

Ingredients:
- Pav Bhaji : 1 cup
- Grated paneer : 1/4 cup
- Chopped coriander leaves : 2 teaspoons
- Wheat flour : 1 cup
- Salt to taste
- Oil for dough : 1 & 1/2 teaspoons
- Extra oil for roasting
- Chat masala for garnishing (optional)
Serves : 2 to3
Time : 20 minutes
Preparation for Paratha:
- Cook bhaji mixture until all liquid evaporates on slow flame.
- Stir continuously and remove from heat, add paneer.
- Let it cool for 5 minutes.
- Add oil and salt in flour in a bowl.
- Slowly add water in it and prepare soft paratha dough. Let it rest for 5 minutes.
- Divide the dough in 3 parts and roll them into medium size round disc.
- Keep bhaji mixture in center and make it round ball.
- Press it little and carefully roll thick medium size paratha.
- Same way prepare all the remaining ones.
- Heat the pan then keep rolled paratha on it. Apply oil on it and roast until crispy.
- Sprinkle chat masala on it and serve with yogurt.
Preparation for Bhaji:
- Heat butter or oil in a pan, add crushed garlic and onion.
- Cook for few seconds then add tomato puree, ginger and salt.
- Cook for 2 minutes and then add chopped capsicum, boiled cauliflower, boiled green peas and boiled and mashed potatoes.
- Add little water, chili powder, pav bhaji masala, turmeric powder, coriander powder and cook for few minutes until mixture is thick.
- Mash all ingredient with a masher.
- Add 1 teaspoon lemon juice, 1 teaspoon butter and freshly chopped coriander leaves and serve with pav(bread).
