Drumstick Rice

Ingredients:
- Boiled rice: 1 & 1/2 cups
- Chopped onion: 3 tablespoons (optional)
- Drum stick: 2 pieces
- Garlic paste: 2 teaspoons
- Salt to taste
- Red chili powder: 1 & 1/2 teaspoons
- Turmeric powder: 1/2 teaspoon
- Boiled corn: 3 tablespoons
- Lemon juice: 1 &1/2 teaspoons
- Garam masala: 1 teaspoon
- Pickle masala (achar masala): 1 &1/2 teaspoons
- Chopped ginger: 1 teaspoon
- Chopped coriander leaves: 2 teaspoons
- Oil : 1 teaspoon
- Ghee: 1 teaspoon
- Cinnamon stick : 1 small
- Cardamom : 2 pieces
- Dry whole chili: 1
- Mint leaves for garnishing
- Chopped capsicum: 1 teaspoon
- Cumin seeds: 1/2 teaspoon
Serves: 4
Preparation time: 10 minutes
Cooking time: 10 minutes
Preparation:
- Cut drum sticks in 2 inch pieces and boil for 10 minutes in water.
- Remove from water. Use this water for cooking rice. Heat oil and ghee in pan then add cinnamon, cardamom and red chili.
- Sauté for few seconds then add cumin seeds and when it turns golden brown in color add onions.
- Add ginger and garlic paste. Cook for a bit and add corn, boiled drum stick, capsicum and rice.
- Then add salt red chili powder, turmeric powder, garam masala, lemon juice, pickle masala and stir properly so that all masalas are mixed with rice properly.
- Remove from heat. Garnish with chopped coriander leaves chopped mint leaves.
