Diet pulao (pilaf/pilau)

Ingredients :

  • Olive oil : 2 teaspoon
  • Boiled buck wheat or Dalia : 1/2 cup
  • Boiled quinoa : 1/2 cup
  • Boiled brown rice or plane : 1/2 cup
  • Chopped onion (stripes) : 1/2 cup
  • Chopped garlic : 1 teaspoon
  • Chopped green chili :  1/4 teaspoon
  • Chopped curry leaves : 4 pieces
  • Cumin seeds : 1/4 teaspoon
  • Salt to taste
  • Peanuts : 1/4 cup
  • Split  Bengal gram : 1/2 teaspoon
  • Curry leaves powder : 3 tablespoons
  • Whole dry chili : 1 to2 piece
  • Grated raw mango : 2 teaspoons (optional)
  • Lemon juice : 1/2 teaspoon
  • Chopped coriander leaves : 1 teaspoon

Serves :  2 to 3
Preparation time  : 10 minutes
Cooking time : 5 minutes

Preparation :

  • Heat oil in a pan. Add peanuts and stir fry until golden brown in color.
  • Remove peanuts from oil and keep aside.
  • Add  Bengal gram in this oil and saute until golden brown in color.
  • Add cumin seeds, whole red chilies and saute for few seconds. Add onion, garlic, green chilies and chopped curry leaves.
  • Cook until onions are transparent, add grated raw mango and cook for few seconds.
  • Add quinoa, rice, buck wheat, salt, curry leaves powder, half of peanuts , lemon juice and mix properly.
  • Remove from heat and add coriander leaves. Garnish with half of the left peanuts and coriander leaves.

Note :

Curry leaves are very good for diabetics, good for digestion and weight loss.
Method to prepare curry leaves powder : Wash and dry leaves then dry inside room or under the fan not in sun light. When leaves completely dry then grind until powder form. Add pinch of salt and store in refrigerator for long life and color.
