Onion and Cabbage Muffins (Malvani Bhaanola)

Ingredients:
- Big Onion -1
- Grated cabbage (or cauliflower) – 1 cup
- Coriander – 1/4 cup
- Salt – 2 tablespoons
- Turmeric – 1/2 tablespoon
- Masala/paprika – 4 tablespoons
- Red Chili Powder – 1 tablespoon
- Garam Masala – 1 tablespoon
- Ginger Garlic Paste – 2 tablespoons
- (Optional) Eggs – 3 eggs
- Baking Soda – 1 small teaspoon
- Besan/chickpea flour – 2 cups
Serves: 4 (10 muffins)
Cooking time : 1 & 1/2 hours (Active time: 15 minutes)
Preparation:
- Chop 1 big onion and 1 cup cabbage. Add 0.25 cup grated coriander and apply 3-4 tbsp salt to this mixture. Keep aside for 1 hour.
- After 1 hour, add 0.5 tbsp turmeric, 4 tbsp Masala, 1 tbsp red chili powder, 1 tbsp Garam Masala and 2 tbsp Ginger Garlic Paste to the mixture.
- (Optional) Add egg whites (from 3 eggs) and keep the yolk separate.
- Add 1 small spoon baking soda.
- Add 2 cups besan/chickpea flour.
- Add some water and taste the mixture for salty/spicy taste.
- Add 2 tbsp hot oil to a baking vessel OR spread oil with your fingers to a muffin pan. Add 3-4 tbsp hot oil to the mixture prepared above.
- Put the mixture in the baking vessel/muffin and spread evenly.
- (Optional) Add egg yolks on the top.
- Heat in an oven for 30-35 minutes at 400F depending on desired consistency.
