Carrot Lentil Soup

Ingredients:

  • Boiled lentil: (masoor dal or orange lentil): 1 cup
  • Chopped carrot: 1/2 cup
  • Chopped tomato: 2 tablespoon or 1 small
  • Vegetable stock: 250 ml
  • Water as per requirement
  • Chopped garlic: 1 & 1/2 teaspoon (optional)
  • Oliv oil: 1 & 1/2 teaspoon
  • Chili flakes: 1 & 1/2 teaspoon
  • Cumin seeds: 1 & 1/2 teaspoon
  • Salt to taste
  • Pepper powder: 1/4 teaspoon
  • Curd: 1/4 cup
  • Lemon juice: 1 teaspoon
  • Chopped coriander leaves: 2 teaspoon

Serves: 4
Time: 20 minutes

Preparation:

  • Roast cuminseeds and chili flakes.
  • Roughly crush them. Heat olive oil and add garlic.
  • Sauté till brown in color then add carrot, boiled lentil, tomato and vegetable stock.
  • Cook for 5 minutes and remove from heat and crush in blender and strain.
  • Add salt, pepper and crushed cumin seedsand chiliflakes mixture and boil for few minutes.
  • Beat curd and leave 1 teaspoon and rest add in to soup and turn off stove.
  • Garnish with roasted mixture of curd and coriander leaves and serve.
