Veggie Corn Soup

Ingredients:

  • Boiled corn: 1/2 cup
  • Chopped french beans: 2 teaspoons
  • Chopped capsicum: 1 tablespoon
  • Chopped carrot: 1 teaspoon
  • Chopped red and yellow bell peppers: 1 tablespoon
  • Chopped green chili: 1
  • Corn starch: 2 teaspoons
  • Chopped coriander leaves: 1 teaspoon
  • Pepper powder; 1/4 teaspoon
  • Salt to taste
  • Vinegar: 1/2 teaspoon

Serves: 2 to 3
Time: 10 minutes

Preparation:

  • Mix corn starch with 2 & 1/2 cup water and stir properly and heat it, stir continuously.
  • Make sure the mixture is semi thick and transparent.
  • Add green chilies, salt and all vegetables. Cook for few seconds and remove from heat and add pepper powder and vineger .
  • Garnish with coriander leaves

Note: You can sauté vegetables in less oil for few seconds so that vegetables remain crunchy.
