Protein rich pancake

Ingredients for Batter :
- Green split moong daal : 1 cup
- Semolina : 2 tablespoons
- Rice powder : 2 teaspoons (optional)
- Green chili paste : 1 teaspoon
- Ginger paste : 1/2 teaspoon
- Salt to taste
- Roasted sesame seeds : 1 & 1/2 teaspoons
- Yogurt : 1/2 cup
- Chopped coriander leaves
- Pinch of turmeric powder
- Asophoetida : 1/2 teaspoon
Ingredients for Stuffing :
- Olive oil : 1 & 1/2 teaspoons
- Chopped ginger garlic : 2 teaspoons
- Chopped onion : 1 & 1/2 teaspoons
- Chopped spinach : 1/2 cup
- Chopped capsicum : 2 teaspoons
- Chopped de-seeded tomato : 1 & 1/2 teaspoons
- Green chili paste : 1/2 teaspoon
- Finely chopped mushroom : 1/4 cup
- Grated tofu : 1/2 cup
- Pepper powder : 1/4 teaspoon
- Chat masala : 1/2 teaspoon
- Chopped coriander leaves : 2 teaspoons
- Lemon juice : 1 teaspoon
Serves : 8 pieces
Preparation time : 10 minutes
Cooking time : 5 to 8 minutes
Preparation :
- Soak daal in water for 2 hours, remove it, add some water and grind until it becomes thick paste like mixture.
- Add semolina, rice flour, yogurt, stir properly and slowly add little water until its smooth like pancake batter.
- Leave this mixture to rest for 5 minutes. For stuffing heat oil in pan, then add chopped ginger and garlic.
- Cook until golden, then add onion and cook until transparent.
- Add chopped mushroom, cook for around 5 minutes, then add spinach, capsicum and saute for few seconds.
- Add green chilies, tomatoes, grated tofu, pepper powder, chat masala and stir properly then turn off heat.
- Add lemon juice, coriander leaves and salt. Keep this mixture for rest.
- Add salt, chili paste, ginger paste, turmeric, asophoetida, coriander, and sesame seeds in moong batter and stir properly.
- Heat non stick pan, apply drop of oil and then pour small portion of batter on it and spread fast like disc shape(shape can be any as per your likeness).
- Apply little oil and cook both sides. Cook for few seconds then serve with green chutney and tomato ketchup.
