Paneer Crispy Cracker

Ingredients:

  • Grated garlic: As per need
  • Salty crackers: 12 pieces
  • Split moong lentils, soaked for 2 hours: 1 cup
  • Crumbled paneer: 1/2 cup
  • Chopped capsicum: 2 teaspoons
  • Boiled corn: 2 teaspoons
  • Chopped cucumber: 2 teaspoons
  • Salt to taste
  • Oil: 1 teaspoon
  • Butter: 2 teaspoons
  • Tomato ketchup: 1 & 1/2 teaspoons
  • Red chili sauce or red chili powder
  • Chopped coriander leaves: 2 tablespoons
  • Pepper powder: 1/4 teaspoon
  • Coriander for garnishing: 2 teaspoons

Serves: 12
Time: 25 minutes

Preparation:

  • Boil water in a pan, add salt and heat it over high flame. Add lentils and cook until tender (do not over cook), stir it occasionally.
  • Drain after 10 minutes & cool it for 5 minutes.
  • Heat oil in a pan, add lentils and stir for few seconds and add corn, capsicum and salt.
  • Turn off heat add black pepper powder, cucumber, paneer, tomato ketchup, chili sauce and coriander leaves.
  • Mix all ingredients properly and rest for 5 minutes. Top crackers with mixture and garnish with garlic and coriander leaves.
