Mexican Stuffed Buns

Ingredients  for Buns :

  • Refine flour : 1 cup
  • Dry yeast  : 1 teaspoon or fresh yeast :1 tablespoon
  • Look warm milk : 1/4 cup
  • Semolina : 1 tablespoon
  • Sugar : 1 teaspoon
  • Oil : 1 & 1/2 tablespoons
  • Salt : 1/2 teaspoon
  • Extra flour for kneading

Ingredients for Stuffing :

  • Oil : 1 teaspoon
  • Chopped garlic : 2 teaspoons
  • Chopped onion : 2 teaspoons
  • Ginger paste : 1/2 teaspoon
  • Chopped and de-seeded tomato : 2 teaspoons
  • Red chili paste : 1/2 teaspoon
  • Salt to taste
  • Chopped spring onion : 2 teaspoons
  • Mix herb : 1 teaspoon
  • Oregano : 1/4 teaspoon
  • Pepper powder : 1/4 teaspoon
  • Tomato ketchup : 1 teaspoon
  • Boiled and mashed black beans/rajma(kidney beans) : 1/2 cup
  • Boiled corn : 2 tablespoons
  • Grated cheese or mayonnaise : 2 teaspoons (as per choice )
  • Extra little oil or butter for bun
  • Mix hubs and chopped coriander leaves for garnishing.

Serves : 6 buns

Preparation time : 10 minutes

Fermentation time : 30 minutes

Baking time : 20 to 25 minutes

Instructions For Buns :

  • Add yeast and sugar in milk in a bowl and cover.
  • Leave it for 5 minutes. Combine semolina, flour, oil and salt in a separate bowl.
  • Add yeast mixture in it and then make very soft dough.
  • Sprinkle flour on it and knead it for 10 minutes.
  • Apply little oil on dough, cover it and keep it near warm place for fermentation for 30 minutes.

Instructions For Stuffing:

  • Heat oil in a pan, add garlic and saute until golden brown in color.
  • Add onion and cook till transparent. Add all other ingredients except cheese , stir and mix properly.
  • Remove from heat, add cheese in it and let it cool.
  • After 30 minutes the dough is ready so knead for few seconds and  sprinkle little flour on it.
  • Divide the dough in 6 portions  and make round balls.
  • Take each ball, flatten it, then stuff it and make round ball.
  • Make sure the balls have been properly sealed. Leave it for 10 minutes for second proving, then apply oil with brush and  sprinkle mix herbs on it.
  • Arrange the buns in the oven tray and bake in pre-heated oven at 180 degrees Celsius for 20 to 25 minutes.
  • Take them out after 25 minutes and they are ready to eat.

    Editor’s Note: The dough may be prepared in a bread machine. Place dough ingredients (using water that is 70 -80 and only 2 cups of bread flour) in bread pan in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a floured surface and punch down. Prepare buns as directed.
