Easy Masala Stir-fried Rice

Ingredients:
- 1 tomato
- 2 spoons ginger garlic paste
- 2 eggs
- 4 dry mushrooms
- 2 bowls of left over rice
- 1 stick of green onions
- 2 eggs (optional)
- 1 cinnamon stick
- 2 star anises
- Oliver oil: 3 spoon
- Turmeric: 1 spoon
- mustard seeds: 1 spoon
- cumin seeds: 2 spoons
- cumin powder: 1 spoon
- gram masala: 1 spoon
- chilly powder: 0.5 spoon
- salt: 2 spoons
Serves: 2
Time: 20 minutes
Preparation:
- Soak the mushrooms in hot water for 15-30 minutes, and drain the water out.
- Dice the tomato.
- Beat the two eggs in a bowl, and crack the egg in another bowl. Do not beat the egg.
- Heat the pan with medium heat, and pour 3 spoons of olive oil.
- Wait for about 30 seconds, add mustard seed, cumin seeds, cinnamon stick, and stir quickly for 10seconds.
- Add ginger garlic paste, and then stir for another 30 seconds.
- Add diced tomato, and mix well. Let it simmer for 5 minutes, stir occasionally.
- Turn the heat to high, and add egg mixture, cumin powder, gram masala, and chilly powder. Stir constantly until the egg is half done.
- Add mushroom, rice and salt, and stir constantly for about 3 minutes.
- Put the egg on the top of the rice, and cover with lid. Turn the heat to low, and let it cook for another 5 minutes or until the egg is cooked.
- Garnish with green onion.
