Crispy Eggplant Chips

Ingredients for sauce :

  • Oil : 1 teaspoon
  • Chopped garlic : 2 teaspoons
  • Chopped ginger : 2 teaspoons
  • Red chili paste : 1 teaspoon
  • Salt to taste
  • Soy sauce : 1 teaspoon
  • Pepper powder : 1/2 teaspoon
  • Vinegar : 1 teaspoon
  • Tomato ketchup : 1 teaspoon (optional)or 1 teaspoon sugar
  • Chopped coriander leaves : 1 teaspoon
  • Corn starch : 1/2 teaspoon
  • Water : 1 & 1/2 teaspoons

Ingredients for crispy eggplants :

  • Long thin eggplants :  500 grams
  • Corn flour (corn starch) : 2 & 1/2 tablespoons
  • Bread crumbs : 2 tablespoons
  • Salt
  • Pepper powder : 1/2 teaspoon
  • Red chili powder : 1 & 1/2 teaspoons
  • Oil for frying

Serves : 2 to 3

Preparation time : 15 minutes

Frying time : 10 minutes

Recipe for eggplant chips:

  • Take a plate and assemble eggplant slices. Sprinkle corn flour and bread crumbs on eggplant slices.
  • Add  pepper powder, salt, chili powder and mix properly.
  • Leave this eggplants  for 10 minutes for rest.
  • After 10 minutes, take a frying pan and fry eggplants on medium heat until golden in color. Make it well done.

Recipe for sauce:

  • Heat oil in pan, then add chopped garlic.
  • Cook until golden brown in color, add ginger and cook for few minutes.
  • Add red chili paste, soy sauce, pepper powder, salt, tomato ketchup and 2 teaspoons of water and stir constantly.
  • Add corn flour in 1/2 cup of water and mix properly. Add the corn flour in the mixture.
  • Add vinegar and cook until mixture is little thick like sauce.
  • Remove from heat. Garnish with fresh coriander leaves.
