Asparagus with Shitake mushrooms

Ingredients :

  • Oil : 2 tablespoon
  • Ginger slice : 4
  • Fresh red chili : 3
  • Garlic chopped : 2 tablespoons
  • Asparagus trimmed and sliced diagonally : 400 grams
  • Shitake mushrooms trimmed and thinly sliced : 150 grams
  • Vegetable stock or water : 150 ml
  • Light soy sauce : 1 tablespoon
  • Mix hubs : 1 & 1/2 teaspoons
  • Chopped coriander : 2 tablespoons
  • Salt to taste
  • Pepper powder : 1/4 teaspoon
  • Roasted sesame oil : 1 teaspoon
  • Black sesame seeds for garnishing : 1 teaspoon

Serves : 4

Preparation time :  5 minutes

Cooking time : 5 minutes

Preparation :

  • In a cooking pan heat oil on medium/high flame and then add ginger slices and stir fry 30 seconds.
  • Reduce heat add chopped red chilies, garlic and stir fry for few seconds.
  • Increase heat and then add asparagus and mushrooms.
  • Stir fry it for 1 minute then add vegetable stock and bring to boil.
  • Add soy sauce and continue to stir until asparagus is tender.
  • After cooking for 2 minutes season with pepper powder, salt and mix herbs.
  • Add sesame seeds and coriander leaves. Remove from heat and garnish with black sesame seeds.
