Stuffed Mexican Calzone

Ingredients: (For dough)

  • Wheat flour: 3/4 cup
  • Refine flour (maida): 3/4 cup
  • Fresh or Dry yeast: 1 teaspoon or 1/2 teaspoon
  • Salt: a pinch
  • Sugar: 1/2 teaspoon
  • Butter: 1& 1/2 teaspoon

Ingredients: (For Stuffing)

  • Oil: 1 & 1/2 teaspoon
  • Garlic paste: 1 teaspoon
  • Chopped onion: 2 tablespoon
  • Chopped and deseeded tomatoes: 1/2 cup
  • Chopped capsicum: 2 tablespoon
  • Bake beans: 2 tablespoon
  • Boiled corn: 2 tablespoon
  • Boiled and mashed potato: 1/4 cup
  • Cream cheese: 1 tablespoon
  • Chili flakes: 1 teaspoon
  • Mix mexican herbs: 1 teaspoon
  • Oregano: 1/4 teaspoon
  • Salt to taste
  • Vinegar: 1/4 teaspoon
  • Lemon zest: a pinch
  • Tomato ketchup: 1/2 teaspoon
  • Garlic paste for applying on roll: 1 teaspoon
  • Olive oil: 2 tablespoon
  • Corn flour: 3- teaspoon
  • Olive oil for brushing : 1 tablespoon

Serves: 8 medium size calzon roll
Preparation time: 20 minutes
Dough fermentation time: 2 to 3 hour
Baking time: 15 to 20 minutes

Preparation For Dough:

  • Take 1/4 cup warm water add sugar and stir then add yeast and cover with lid. Leave it for 5 minutes.
  • Combine both wheat and refine flour and add butter.
  • Mix butter properly in flour and make pit in flour. Add yeast mixture and cover the bowl for 5 minutes.
  • Then make smooth dough. You can add more water as per requirement. Keep this dough in covered box and keep in warm place to ferment for at least 2 to 3 hour.

Preparation For Stuffing:

  • Heat oil in a pan and add garlic paste and sauté till it brown in color. Add onion and cook till transparent.
  • Add capsicum, tomato and beans. Cook for few minutes add corn, mashed potato and cream cheese.
  • Season with salt, oregano, chili flakes, mexican seasoning, lemon zest,vinegar and tomato ketchup.
  • Mix all ingredients properly and remove from heat and leave it to cool.
  • When dough becomes fluffy, remove from box and apply little flour on kitchen platform or any flat surface and keep dough on it, add salt and start massaging the flour for 5 minutes.
  • Give the dough round shape. Cut ball in 8 equal portion and take one and roll thin sheet (roti).
  • Apply olive oil on it then sprinkle corn flour on it and fold like waves and roll like a wheel.
  • Press and roll in rectangle shape and apply olive oil and garlic paste and keep stuffing on one side.
  • Apply water on all side of roll and fold like pocket or bedding and seal with fork.
  • Preheat oven at 180 degree. Apply olive oil on all sides of calzon and bake for 20 minutes till little golden brown in color and crispy.
  • Remove from oven and apply little olive oil with brush. Serve with salsa sauce.
