Sprout Matki

Ingredients :
- Boiled and chopped potato : 1/2 cup
- Chopped tomatoes : 1/2 cup
- Chopped onion : 1/4 cup
- Sprout : 1 & 1/2 cups
- Oil : 1 & 1/2 teaspoons
- Bay leaves : 1
- Whole dry chili : 1
- Curry leaves : 3
- Garlic paste : 3 teaspoons
- Asafoetida pinch
- Chopped green chili : 1 (optional)
- Garam masala : 1 & 1/2 teaspoons
- Turmeric powder : 1/4 teaspoon
- Red chili powder : 1 & 1/2 teaspoons
- Ushal masala : 1/2 teaspoon
- Salt to taste
- Lemon juice : 1 & 1/2 teaspoons
- Chopped coriander leaves : 1 & 1/2 tablespoons
- Onion rings for garnishing
Serves : 4
Cooking time : 20 minutes
Preparation :
- Soak sprout in water for 4 hours and remove water.
- Leave them for 5 hours to germinate by tying them in a piece of cloth.
- Heat oil in a cooking pan, add bay leaves, curry leaves and chili.
- Add asafoetida, onion and sauté till onions are transparent yellow in color.
- Add garlic paste, cook for few seconds, add tomatoes.
- Cook for few seconds then add sprouts, potatoes and 2 & 1/2 cups of water.
- Stir properly and add all the masala(spices) mentioned in the list of ingredients.
- Cook until the sprouts become soft.
- Add lemon juice, coriander leaves and remove from heat.
- Garnish with onion rings, coriander leaves and serve with bread or pav.
