Sprout Matki

Ingredients :

  • Boiled and chopped potato : 1/2 cup
  • Chopped tomatoes :  1/2 cup
  • Chopped onion : 1/4 cup
  • Sprout : 1 & 1/2 cups
  • Oil : 1 & 1/2 teaspoons
  • Bay leaves : 1
  • Whole dry chili : 1
  • Curry leaves : 3
  • Garlic paste : 3 teaspoons
  • Asafoetida pinch
  • Chopped green chili :  1 (optional)
  • Garam masala : 1 & 1/2 teaspoons
  • Turmeric powder : 1/4 teaspoon
  • Red chili powder : 1 & 1/2 teaspoons
  • Ushal masala : 1/2 teaspoon
  • Salt to taste
  • Lemon juice : 1 & 1/2 teaspoons
  • Chopped coriander leaves : 1 & 1/2 tablespoons
  • Onion rings for garnishing
Serves :  4
Cooking time : 20 minutes
Preparation :
  • Soak sprout in water for 4 hours and remove water.
  • Leave them for 5 hours to germinate by tying them in a piece of cloth.
  • Heat oil in a cooking pan, add bay leaves, curry leaves and chili.
  • Add asafoetida, onion and sauté till onions are  transparent yellow in color.
  • Add garlic paste, cook for few seconds, add tomatoes.
  • Cook for few seconds then add sprouts, potatoes and 2 & 1/2 cups of water.
  • Stir properly and add all the masala(spices) mentioned in the list of ingredients.
  • Cook until the sprouts become soft.
  • Add lemon juice, coriander leaves and remove from heat.
  • Garnish with onion rings, coriander leaves and serve with bread or pav.
