Quick Saffron Peda

Ingredients:

  • Paneer (cottage cheese): 4 cup (fresh/frozen paneer)
  • Milk powder: 1/3 cup
  • Milk: 1/3 cup
  • Sugar: 1/2 cup
  • Ghee or unsalted butter: 1 & 1/2 teaspoon
  • Cardamom powder: 1/4 teaspoon
  • Chopped pistachios: 1 teaspoon
  • Saffron strands: 4 (dissolved in 1 tea spoon milk)

Serves: 18 pieces
Time: 15 minutes

Preparation:

  • Wash and dry paneer and then grate. Heat butter in pan, add grated paneer, milk, saffron and milk powder.
  • Mix it well and cook mixture on medium heat. Stir continuously. When mixture starts leaving the side of pan and becomes like dough turn off the heat.
  • Transfer the mixture into another bowl and let it cool till luke warm.
  • Mix sugar and cardamom powder and wait for some time so that the dough becomes smooth.
  • Divide mixture in 18 equal parts and roll them in to round balls and flatten a bit.
  • Garnish with chopped pistachios.

Note: Add sugar in peda when mixture is lukewarm & not hot.
