Phirni

Ingredients :
- Boiled couscous : 1 cup
- Grated carrot : 1/2 cup
- Full fat milk : 1 cup
- Evaporated milk : 1 tin (100 ml)
- Condensed milk : 3 tablespoons
- Sugar : 2 teaspoons (as per your taste)
- Cardamom powder : 1/2 teaspoon
- Saffron stands : 4
- Chopped almonds : 2 teaspoons
- Chopped pistachios : 1 & 1/2 teaspoon
- Raisins : 1 teaspoon
- Chopped cashew nuts : 1 & 1/2 teaspoons
- Chopped pistachios and rose petals for garnishing
- Earthen pot : 4 to 5
Serves : 4
Cooking time : 15 minutes
Preparation:
- To prepare couscous, boil 1/2 cup water and add couscous.
- Leave it for 5 minutes till water is absorbed or you can cook in pressure cooker.
- Heat 1 cup milk in a pan, add grated carrot and cook for 5 minutes.
- Add evaporated milk in it and cook for few seconds, then add couscous in it and stir continuously.
- Add condensed milk and chopped nuts. Soak saffron stands in 1 teaspoon milk.
- Add it in the mixture and stir properly. Sprinkle cardamom powder and stir .
- Remove from heat and let it cool.
- Pour the mixture in earthen pots and garnish with pistachios and rose petals.
