Phirni

Ingredients :

  • Boiled couscous : 1 cup
  • Grated carrot : 1/2 cup
  • Full fat milk : 1 cup
  • Evaporated milk : 1 tin (100 ml)
  • Condensed milk : 3 tablespoons
  • Sugar : 2 teaspoons (as per your taste)
  • Cardamom powder : 1/2 teaspoon
  • Saffron stands : 4
  • Chopped almonds : 2 teaspoons
  • Chopped pistachios : 1 & 1/2 teaspoon
  • Raisins : 1 teaspoon
  • Chopped cashew nuts : 1 & 1/2 teaspoons
  • Chopped pistachios and rose petals for garnishing
  • Earthen pot : 4 to 5

Serves :  4

Cooking time : 15 minutes

Preparation:

  • To prepare couscous, boil 1/2 cup water and add couscous.
  • Leave it for 5 minutes till water is absorbed or you can cook in pressure cooker.
  • Heat 1 cup milk in a pan, add grated carrot and cook for 5 minutes.
  • Add evaporated milk in it and cook for few seconds, then add couscous in it and stir continuously.
  • Add condensed milk and chopped nuts. Soak saffron stands  in 1 teaspoon milk.
  • Add it in the mixture and stir properly. Sprinkle cardamom powder and stir .
  • Remove from heat and let it cool.
  • Pour the mixture in earthen pots and garnish with pistachios and rose petals.
