Mexican Spice cake

Ingredients for Potato Layer:

  • Boiled and mashed potatoes : 500 grams
  • Chopped green capsicum: 2 tablespoons
  • Salt to taste
  • Chili flakes; 1 tablespoon
  • Mexican herbs: 1 & 1/2 teaspoons
  • Pepper powder: 1/4 teaspoon
  • Breadcrumbs: 3 tablespoons

Corn layer ingredients:

  • Boiled and roughly crushed corn: 1 cup
  • Chopped red capsicum: : 3 tablespoons
  • Salt to taste
  • Pepper powder: 1/4 teaspoon
  • Lemon juice: 1/2 teaspoon
  • Paprika : 1/2 teaspoon
  • Chopped coriander: 1 teaspoon

Black beans or Rajma layers ingredients:

  • Oil: 1 teaspoon
  • Boiled and mashed beans: 1 & 1/2 cups
  • Chopped three colors capsicums: 2 teaspoons
  • Salt to taste
  • Tomato ketchup: 1 & 1/2 teaspoon
  • Chili flakes: 1 teaspoon
  • Oregano: 1 & 1/2 teaspoon
  • Ginger garlic paste: 1 & 1/2 teaspoons
  • Chopped garlic: 2 teaspoons

Other ingredients:

  • Extra dry bread crumbs: as per required
  • Corn flour: 1 & 1/2 teaspoons
  • Water: 1/4 cup
  • Normal oil or olive oil: 4 teaspoons
  • Ready salsa: 1/4 cup

Serves: 4
Preparation time: 15 minutes
Cooking time: 10 minutes

Preparation:

  • To prepare potato layer, mix all ingredients properly in a bowl and keep aside.
  • Heat oil in a pan and add chopped garlic and cook till brown in color.
  • Add ginger garlic paste, stir for few minutes, add chopped capsicum and cook for some time then add mashed beans and other ingredients. Mix all ingredients properly and turn off heat.
  • Combine all ingredients in bowl and prepare corn mixture.  Mix corn flour with water and prepare until slurry.
  • Apply oil in non stick pan and make layer of half portion of potato mixture. Make another layer of half portion of beans mixture on it, spread salsa sauce on it and keep corn mixture on it.
  • Repeat all layers again and cover the top with potato mixture. Apply corn flour slurry on all sides of cake and sprinkle bread crumbs on it.
  • Apply little oil on top of cake and cover the pan with lid and cook for 5 minute till golden in color.
  • Turn the cake up side down and cook another 5 min till golden in color and crispy. Garnish with salsa sauce.
  • Serve hot.

Note: You can prepare cake in preheated oven on 180 degree for 25 minutes till golden brown in color.
