Brown Beaten Rice (Poha) Salad

Ingredients:
- Beaten rice —2 cup
- Chopped onion —-2 tablespoon
- Chopped capsicum –2 tablespoon
- Chopped carrot —2 tablespoon
- Boiled corn —2 tablespoon
- Chopped green chili —1/2 teaspoon
- Chopped jalapeno —1/4 teaspoon
- Black olive –1/4 teaspoon
- Lemon juice —1 teaspoon
- Garlic powder —1 tablespoon
- Salt to taste
- Roasted peanuts —-1 teaspoon
- Roasted pine nuts –1/2 teaspoon (optional)
- Cashew nuts —2 pieces
- Roasted almond —2 pieces (optional)
- Oil —1 teaspoon
- Sugar –1 teaspoon
- Coriander leaves ——2 tablespoon
- Pepper powder —-1/4 teaspoon
- Cheery for garnishing —-2 pieces
Serves —— 4
Time —10 min
Recipe:
- Soak beaten rice for 5 min in very less water.
- Heat oil add onion and green chilies and saute till onion turns pink.
- Add beaten rice in it and cook for 2 min.
- Remove from heat and let it cool.
- Add all other ingredients and stir well and garnish with cherries and coriander leaves.
- Jains can make it without onions.
