Brown Beaten Rice (Poha) Salad

Ingredients:

  • Beaten rice —2 cup
  • Chopped onion —-2 tablespoon
  • Chopped capsicum –2 tablespoon
  • Chopped carrot —2 tablespoon
  • Boiled corn —2 tablespoon
  • Chopped green chili —1/2 teaspoon
  • Chopped jalapeno —1/4 teaspoon
  • Black olive –1/4 teaspoon
  • Lemon juice —1 teaspoon
  • Garlic powder —1 tablespoon
  • Salt to taste
  • Roasted peanuts —-1 teaspoon
  • Roasted pine nuts –1/2 teaspoon (optional)
  • Cashew nuts —2 pieces
  • Roasted almond —2 pieces (optional)
  • Oil —1 teaspoon
  • Sugar –1 teaspoon
  • Coriander leaves ——2 tablespoon
  • Pepper powder —-1/4 teaspoon
  • Cheery for garnishing —-2 pieces

Serves —— 4
Time —10 min

Recipe:

  • Soak beaten rice for 5 min in very less water.
  • Heat oil add onion and green chilies and saute till onion turns pink.
  • Add beaten rice in it and cook for 2 min.
  • Remove from heat and let it cool.
  • Add all other ingredients and stir well and garnish with cherries and coriander leaves.
  • Jains can make it without onions.
