Bread Barfi with Watermelon Seeds

Ingredients:

  • Bread crumbs: 2 cups
  • Milk: 2 cups
  • Fresh grated coconut: 1cup
  • Sugar: 1 cup
  • Full fat milk: 1 cup
  • Coarsely chopped almonds, cashew nuts and pistachios: 1/4 cup
  • Saffron: 4 strands
  • Cardamom powder: 1/4 teaspoon
  • Milk powder:1 & 1/2 teaspoons( as per require)
  • Rose petals for garnishing
  • Roasted watermelon seeds: 1 & 1/2 teaspoons

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes

Preparation:

  • Remove borders from bread slices and cut them in cubes. Mix it with milk and keep aside.
  • Heat sugar and coconut together in a pan. Stir continuously till moisture is absorbed properly.
  • Add bread mixture, saffron milk, watermelon seeds, dry fruits and cook on slow flame till mixture is dry.
  • Remove from heat and let it cool for few minutes. Then add 1 teaspoon milk powder if mixture is very soft.
  • Apply little butter or ghee(clarified butter) in plate and spread bread mixture in it evenly and garnish it with chopped almonds, cashew nuts and pistachios.
  • Refrigerate it for 5 minutes and cut in square pieces.
  • Garnish it with rose petals.
