Black Bean Chili Vegetable

Ingredients:

  • Carrot: 1/2 piece
  • Dry mushrooms: 5 pieces
  • Big chunks of mountain yam or potatoes – 2 pieces
  • Green vegetables as you like
  • Rice noodles
  • Lao gan ma black bean chili paste: 3 spoons
  • Soy sauce: 1 spoon
  • Olive oil: 2 spoons
  • Salt: 1 spoon
  • Ginger garlic paste: 2 spoons

Serves: 1

Preparation Time: 15 minutes

Preparation:

  • Soak the mushrooms and rice noodles in hot water for 15minutes or more.
  • Dice the mountain yam/potatoes and carrot to small chunks.
  • Heat a pan on medium high temperature. Once the pan is hot, add oil and wait for 30seconds.
  • Add ginger garlic paste first, and then add carrot and potatoes/mountain yam, stir constantly for at least 2 minutes.
  • Add black bean chili paste and soy sauce and stir for another 3 minutes. Do not add too much soy sauce cuz it will overtake the chili paste taste.
  • Add half cup of water and put it to medium high. Add mushroom. Let it cook until carrots and mountain yam/potatoes are soft.
  • Add noodle and salt and let it cook until you like. Add more water if needed.
  • Add green vegetables and turn of the heat and let it simmer for 3 minutes
  • Enjoy!
