Stuffed Red Bell Pepper(Capsicum)

Ingredients:

  • Medium size red capsicum: 1
  • Oil: 1 /2 teaspoon
  • Salsa sauce: 1/4 cup
  • Salt to taste
  • Pepper powder:  1/4 teaspoon
  • Boiled corn: 2 tablespoons
  • Chopped green capsicum: 2 tablespoons
  • Oregano: 1/4 teaspoon
  • Chili flakes: 1 teaspoon
  • Bread crumbs: 2 tablespoons
  • Boiled quinoa: 1/2 cup
  • Grated cheese: 3 tablespoons
  • Chopped black olive: 1/2 teaspoon

Serves: 2 persons
Time: 15 minutes

Preparation:

  • Cut red capsicum vertically in to two equal size.
  • Take quinoa in bowl and add all ingredients except oil and cheese.
  • Mix all ingredients properly and stuff the red capsicums with it.
  • Sprinkle cheese on it.
  • Heat oil in a pan on low flame and place the capsicum and cover the pan with lid.
  • Cook for 5 minutes till capsicum is little soft and the cheese melts.
  • Remove from heat and garnish it with chili flakes.
  • Alternately the capsicum can be roasted in an oven till cheese melts.
