Raw Mango Rice

Ingredients:
- Boiled long grain rice —— 2 cup
- Grated raw mango — 1 or 11/2 cup (as per requirement)
- Oil or butter – 2 1/2 teaspoon
- Curry leaves ——- 6 to 7
- Split gram pulses ( chanadal)—- 2 teaspoon
- Udad dal — 1 1/2 teaspoon
- Mustard seeds —- 1/2 teaspoon
- Chopped green chili — 1 teaspoon
- Red dry chili (sabut chili) —- 2 pieces
- Cumin seeds — 1/2 teaspoon
- Asafoetida — 1 teaspoon
- Chopped coriander leaves ——- 3 teaspoon.
Serves: 4
Time: 15 min
Recipe:
- Mix grated raw mango with boiled rice and keep for ten min.
- Heat oil in pan, add mustard seeds. When it crackles add chanadal and saute till it brown .
- Add udad dal and roast till pink. Add asafoetida,red whole dry chilly, cumin seeds,curry leaves and chopped green chilly and saute for few minutes.
- Add rice and mango mixture in it and add salt in it.
- Mix all things properly and remove from gas stove .
- Add coriander leaves and garnish with grated mango and coriander leaves.
- Roasted cashew nut are optional.
