Raw Mango Rice

Ingredients:

  • Boiled long grain rice —— 2 cup
  • Grated raw mango — 1 or 11/2 cup (as per requirement)
  • Oil or butter – 2 1/2 teaspoon
  • Curry leaves ——- 6 to 7
  • Split gram pulses ( chanadal)—- 2 teaspoon
  • Udad dal — 1 1/2 teaspoon
  • Mustard seeds —- 1/2 teaspoon
  • Chopped green chili — 1 teaspoon
  • Red dry chili (sabut chili) —- 2 pieces
  • Cumin seeds — 1/2 teaspoon
  • Asafoetida — 1 teaspoon
  • Chopped coriander leaves ——- 3 teaspoon.

Serves: 4
Time: 15 min

Recipe:

  • Mix grated raw mango with boiled rice and keep for ten min.
  • Heat oil in pan, add mustard seeds. When it crackles add chanadal and saute till it brown .
  • Add udad dal and roast till pink. Add asafoetida,red whole dry chilly, cumin seeds,curry leaves and chopped green chilly and saute for few minutes.
  • Add rice and mango mixture in it and add salt in it.
  • Mix all things properly and remove from gas stove .
  • Add coriander leaves and garnish with grated mango and coriander leaves.
  • Roasted cashew nut are optional.
