Hot Spicy Rajma Rice

Ingredients: (Cooking Time – 25 minutes, Serves – 4)

For preparing paste—

  • Onion—1 big size
  • Dry coconut grated —-3 tablespoon
  • Garlic pod –6 to 7
  • Ginger—1 small piece
  • Green chilly—-3
  • Dry coriander powder—2 teaspoon
  • Cumin powder—1 teaspoon
  • Clove—-7 pieces
  • Cinnamon stick—1 inch
  • Pepper——2 teaspoon
  • Red chilly powder —2 teaspoon
  • Turmeric powder—1/2 teaspoon

For Rice——-

  • Boiled rice—11/2 cup (long grain rice )
  • Boiled rajma—-1/4 cup
  • Coriander leaves –3 tablespoon
  • Chopped capcicum —2 tablespoon
  • Bay leaf–1
  • Chopped mint leaves –1/2 teaspoon
  • Cashew nuts –5 pieces
  • Spring onion —–2 teaspoon
  • Tomato ketchup–11/2 teaspoon
  • Oil 1 teaspoon
  • Butter 2 teaspoon

Recipe:

  • Put onion on direct heat and roast till little black.  Saute coconut, pepper,clove and cinnamon stick for 2 min in 1/2 teaspoon oil.
  • Put all ingredients in mixture jar and make smooth paste. Take 1 teaspoon oil and 11/2 teaspoon butter in heating pan.
  • Add bay leave and add paste saute for 2 min. Add cashew nuts, chopped mint leaves, salt, tomato ketchup and boiled rajma and stir well. Add 1 teaspoon lemon juice and boiled rice mix it well. Add coriander leaves stir.
  • Spread 1/4 teaspoon oil in bowl, keep rajma rice inside and press it little and unmounted in serving plate and garnish with spring onions.
