Thai Raw Papaya Paratha

Ingredients for Stuffing:
- Grated raw papaya: 1 cup
- Salt to taste
- Roughly crushed roasted peanuts: 2 tablespoons
- Red chili paste: 1 teaspoon
- Chopped lemon grass(white portion): 1/2 teaspoon
- Boiled and mashed potato: 1 medium size
- Garlic paste: 1 tablespoon
- Chopped spring onion: 2 tablespoons
- Chopped basil: 1/2 teaspoon(or dry basil)
- Sugar powder: 1/2 teaspoon
- Lemon juice: 1/2 teaspoon
- Chopped garlic: 1 teaspoon
- Oregano: 1/2 teaspoon
- Chopped red thai chili: 1 (optional)
Ingredients for Dough:
- Wheat flour: 2 cups
- Salt to taste
- Oil: 2 teaspoons
- Water as per required
- Extra oil for roasting paratha
Serves: 5 to 6 medium sizes
Preparation time: 10 minutes
Cooking time: 15 minutes
Preparation:
- Combine flour, oil and salt properly in a bowl, carefully add water and prepare soft paratha dough.
- Let it rest for 5 minutes. Heat oil in a cooking pan, add chopped garlic and cook till golden brown in color.
- Add garlic paste, lemon grass, grated papaya and salt. Cover pan with lid for few seconds then add potato , red chili paste, oregano, chopped chili, peanuts, basil, sugar powder and lemon juice.
- Stir properly and turn off stove. Add spring onions and let it cool.
- Knead dough with little oil then divide it in 6 balls. Take one ball and roll thin round sheet. Do this for remaining balls.
- Spread stuffing on one sheet and cover with another and lock the borders with fork.
- Heat a pan and roast paratha by applying oil and cook till golden brown in color and crispy.
- Serve with curd/yogurt and mix with Thai paste.
