Stuffed Vegetables Snake Gourd

Ingredients:
- Snake gourd : 150 grams
- Oil: 1/4 teaspoon
Ingredients for Stuffing:
- Grated carrot: 1 & 1/2 teaspoons
- Grated cabbage: 1 & 1/2 teaspoons
- Finely chopped capsicum: 1 & 1/2 teaspoons
- Boiled corn: 2 teaspoons
- Boiled and meshed potato: 2 tablespoons ( optional)
- Chopped parsley: 1 teaspoon
- Salt to taste
- Olive oil: 1 teaspoon
- Red chili paste: 1 teaspoon
- Garlic paste: 1 teaspoon
- Chili flakes: 1/4 teaspoon
- lemon juice or vinegar: 1/2 teaspoon
- Cream cheese: 2 teaspoons
- Pepper powder: 1/4 teaspoon
- Tomato ketchup: 1 teaspoon
- Garlic chutney and cheese spread for garnishing
- Olive oil: 1 teaspoon
Serves: 5 to 6 pieces
Preparation time: 5 minutes
Microwave time: 10 minutes
Preparation:
- Cut Snake gourd in 3 inch sized pieces and brush oil on it.
- For stuffing heat oil and add garlic and sauté for few seconds in cooking pan.
- Add capsicum, carrot, corn and salt. Add potato, chili paste, chili flakes, pepper powder, tomato ketchup, lemon juice and turn off the heat.
- Add cream cheese and parsley. Stuff snake gourd pieces with this mixture and arrange in microwave proof plate and micro wave it for 10 minutes.
- Check if it is properly cooked.
- Garnish with garlic chutney and cheese spread on top and serve.
