Stuffed Potatoes

Ingredients:
- Par boiled big size potatoes: 2
- Oil: 2 teaspoon
Stuffing ingredients:
- Grated fresh coconut: 2 tablespoons
- Roughly crushed peanut: 2 & 1/2 teaspoons
- Chili ginger paste: 1 teaspoon
- Salt to taste
- Pepper powder: 1/2 teaspoon
- Chopped coriander leaves: 2 tablespoons
- Chopped mint leaves: 1/2 teaspoon
- Grated paneer (coated cheese): 2 tablespoons
- Chat masala: 1 teaspoon
- Lemon juice: 1/2 teaspoon
- Sugar powder: 1/2 teaspoon
- Left potatoes inside portion
- Grated paneer, coriander leaves, chat masala for garnishing
Serves: 4 people
Preparation time: 10 minutes
Baking time: 15 minutes
Preparation:
- Parboil potato with skin and let it cool for an hour or keep in fridge for some time.
- Cut small upper portion and remove inside pulp with spoon and shape it like cup.
- Apply oil/butter inside and bake for 5minutes in 180 degrees oven.
- Mix all stuffing ingredients properly and stuff potato with it.
- Press stuffing into potato.
- Apply oil on outer side of potato and bake on 180 degrees for 15 minutes.
- Garish with paneer and coriander leaves, sprinkle chatmasala and serve hot with green chutney or tomato ketchup.
- One can cut the potatoes horizontally and do the stuffing and serve.
