Kaju Chikki (Cashewnut Crunchy Bar)

Ingredients:

  • Cashew nuts: 1 cup
  • Brown sugar(raw sugar): 1 & 1/2 cup
  • Butter(unsalted) or ghee: 1 teaspoon
  • Ghee : 1/2 teaspoon for rolling pan

Serves: 10 pieces
Time: 15 minutes

Preparation:

  • Cut cashew nuts in 2 parts vertically and roast for 1 to 2 minutes in a pan. Leave it aside.
  • Heat ghee(clarified butter) in pan, add sugar and stir continuously on slow flame.
  • After 6 to 7 minutes sugar starts melting, check a drop of melted sugar in water.
  • If it becomes hard then sugar is caramelized & ready. Turn off heat, add cashew nuts and stir properly so that all cashew nuts are coated with caramel properly.
  • Apply ghee on flat surface and spread caramelized cashewnuts and immediately roll medium thick layer.
  • Make markings with knife but do not cut. Let it cool for 10 minutes then cut and store in air tight container.
