Quick Saffron Peda

Ingredients:
- Paneer (cottage cheese): 4 cup (fresh/frozen paneer)
- Milk powder: 1/3 cup
- Milk: 1/3 cup
- Sugar: 1/2 cup
- Ghee or unsalted butter: 1 & 1/2 teaspoon
- Cardamom powder: 1/4 teaspoon
- Chopped pistachios: 1 teaspoon
- Saffron strands: 4 (dissolved in 1 tea spoon milk)
Serves: 18 pieces
Time: 15 minutes
Preparation:
- Wash and dry paneer and then grate. Heat butter in pan, add grated paneer, milk, saffron and milk powder.
- Mix it well and cook mixture on medium heat. Stir continuously. When mixture starts leaving the side of pan and becomes like dough turn off the heat.
- Transfer the mixture into another bowl and let it cool till luke warm.
- Mix sugar and cardamom powder and wait for some time so that the dough becomes smooth.
- Divide mixture in 18 equal parts and roll them in to round balls and flatten a bit.
- Garnish with chopped pistachios.
Note: Add sugar in peda when mixture is lukewarm & not hot.
