Date Walnut Muffin

Ingredients:
- Chopped dates: 1/2 cup
- Chopped walnuts: 1/4 cup
- Refined flour: 1 cup (100 grams )
- Condensed milk: 3/4 cup (75 grams)
- Soda by carbonate: 1/4 teaspoon
- Baking powder: 1/2 teaspoon
- Butter 2 & 1/2 tablespoon
- Ground sugar: 2 teaspoon
- Curd (yogurt): 1 teaspoon
- Vanilla essence: 1/2 teaspoon
Serves: 6 muffin
Preparation time: 15 minutes
Baking time: 45 to 50 minutes
Preparation:
- Wash dates and chop into small pieces.
- Add baking powder and soda bi-carbonate in flour. Take butter, sugar, condensed milk and curd in bowl and beat for 5 minutes in one direction. Add flour mixture and add 1/2 cup milk.
- Beat for 5 minutes till the mixture becomes fluffy. Add vanilla essence and beat for few seconds.
- Arrange paper cup in muffin mould and fill half cup with the mixture, then add dates and wall nut.
- Again pour mixture and leave little space in mold, Tap mould on the table so the air trapped inside the batter escapes.
- Preheat oven on 170 degree. Arrange all muffins in oven tray and bake for 50 minutes.
Note: It is very healthy recipe. Dates and walnuts are good for heart, rich with iorn and calcium. Diabetic patients can avoid sugar and add little more dates.
