Vegetable Quinoa Khichdi (Porridge)

Ingredients:

  • Boiled quinoa —–1 1/2 cup
  • Boiled yellow lentil (moong dal ) —1/2 cup
  • Chopped onion —2 tablespoon
  • Garlic paste —2 1/2 teaspoon
  • Chopped capsicum —–2 tablespoon
  • Lemon juice —-1 tablespoon
  • Chili ginger paste —1 teaspoon
  • Red chili powder —-1 teaspoon
  • Cumin seeds —-1 tablespoon
  • Chopped tomato ——1 tablespoon
  • Boiled potato cut in cubes —–1 tablespoon
  • Par boiled and chopped french beans —-1 table spoon
  • Boiled green peas —–1 tablespoon
  • Par boiled and chopped carrot —-1 tablespoon
  • Roasted pea nuts or cashew nuts —1 teaspoon (optional
  • Salt to taste
  • Chopped coriander leaves ——2 tablespoon
  • Garam masala —-1/4 teaspoon

Serves: 4
Preparation time —10 minutes
Cooking time —-10 minutes

Recipe:

  • Cook yellow lentil (do not overcook). Boil quinoa properly.
  • Heat oil and add cumin seeds when it crackles add garlic paste and saute for few min .
  • Add chopped onion and cook till transparent. Add all other ingredients and stir properly.
  • Remove from heat and add chopped coriander leaves.
  • Take bowl and grease with oil and fill with above mixture and press little and unmould in serving plate and garnish with pomegranate pearls & serve.
