Thai Vegetable Soup

Ingredients:

  • Vegetables stock – 4 cup
  • Lemon leaves – 4 pieces
  • Chopped lemon grass( white part) – 2 teaspoon
  • Grated ginger – 1 1/2 teaspoon
  • Square chopped carrot – 1 table spoon
  • Square chopped cabbage – 1 tablespoon
  • Chopped baby corn – 1 teaspoon
  • Fresh chopped red chili – 1 chili
  • Soya sauce – 1/2 teaspoon
  • Red chili sauce – 1/4 teaspoon
  • Pepper powder – 1/4 teaspoon
  • Salt to taste
  • Coconut milk – 2 teaspoon
  • Tofu or paneer small pieces – 1 teaspoon
  • Boiled noodles – 1 tablespoon
  • Parsley – 1/4 teaspoon
  • Chili oil – 1/4 teaspoon

Serves – 4
Time – 15 minutes

  • Boil lemon leaves, grated ginger and lemon grass for 10 minutes and strain.
  • Add vegetable stock, chopped vegetables, tofu, sauces and spices and boil for two minuted.
  • Add coconut milk, boil for a minute and remove from heat.
  • First keep noodles in the serving bowl,pour soup on it and garnish with parsley and a few drop of chilli oil while serving.
