Thai Grilled Sandwich

Ingredients:
- Carrot: 1
- French beans: 100 grams
- Cabbage: 100 grams
- Capsicum: 1 medium size
- Fresh red chili: 1(chopped)
- Lemon grass white portion: 1/4 cup
- Boiled mashed potato: 1 medium size
- Lemon zest: 1/2 teaspoon
- Chopped garlic: 3 tablespoons
- Chopped ginger: 2 tablespoons
- Red Thai paste (sauce): 2 tablespoons
- Chopped coriander: 2 tablespoons
- Salt to taste
- Olive oil: 1 & 1/2 teaspoon
- Sesame seeds: 1 teaspoon
- Lemon juice: 1 teaspoon
- Chopped onion: 1 piece
- Basil leaves: 5 pieces
- Bread slices: 4
- Butter as per requirement
Time: 15 minutes
Serves: 2
Preparation for Dip:
Take 2 table spoons of cream cheese, add 1/2 teaspoon tomato ketchup, 1/4 teaspoon red chili sauce, pinch of salt and stir properly and sprinkle dry basil leaves.
Preparation for Sandwich:
- Heat oil in pan and add garlic and ginger. Sauté till golden brown in color and add onion.
- Cook till transparent. Roughly crush all vegetables in chopper or chop them finely.
- Add vegetables, salt and cook for 5 minutes. Add potato, thai paste, sesame seeds and lemon juice.
- Cook for few seconds and turn off heat. Add lemon zest, coriander and basil leaves. Let it cool.
- Apply butter on both sides of bread (or one side), keep stuffing on it and cover with another slice.
- Grill this sandwich in toaster or griller till golden and crispy. Serve with dip.
Note: you can add crushed peanuts too.
