Stuffed Sweet Potatoes with Lauki Skin

Ingredients :

  • Lauki skin—-1 1/2 cup
  • Salt to taste
  • Sesame seeds —2 teaspoon
  • Sugar —–1 teaspoon
  • Lemon juice —-1 teaspoon
  • Oil —1 teaspoon
  • Chili ginger paste—-1 teaspoon
  • Curry leaves —5 pieces
  • Mustard seeds –1/4 teaspoon
  • Cumin seeds—1/4 teaspoon
  • Coriander leaves—-2 tablespoon
  • Boiled sweet potatoes –2 big size

Serves –3 to 4
Time —-20 min

Recipe:

  • Cut boiled sweet potatoes horizontally into 3 inches. Scoop inner part and make cup.
  • Heat oil, add mustard seeds and when it crackles add cumin seeds, curry leaves, sesame seeds and chili ginger paste, lauki skin ,salt and cook for 5 min.
  • Add sugar and lemon juice and remove from heat. Let it cool then add coriander leaves.
  • Make smooth paste of all in blender. Add scooped sweet potatoes portion in paste and mix well .
  • Stuff sweet potato cups with this lauki skin paste and garnish with coriander leaves or sev.
