Stuffed Mushroom with Marinara Sauce

Ingredients: (Cooking Time: 20 minutes, Serves: 5)

  • Mushroom —-250 gms
  • Boiled corn—3 teaspoon
  • Red and green capsicum(Chopped)—-2 teaspoon
  • Chili flakes—–1 1/2 teaspoon
  • Pepper powder—-1/4 teaspoon
  • Salt to taste
  • Butter–1 tablespoon
  • Olive oil—-1 teaspoon
  • Cream cheese or cooking cheese—–2 tablespoon
  • Chopped garlic—-1 1/2 teaspoon
  • Ingredients for marinara sauce:
  • Blanch and chopped tomato —-1 cup
  • Red chili sauce—-1 1/2 teaspoon
  • Olive oil——1 1/2 teaspoon
  • Chopped garlic——2 teaspoon
  • Chopped onion—-1 1/2 teaspoon
  • Salt to taste
  • Tomato ketchup—-1 1/2 teaspoon
  • Oregano–1 teaspoon
  • Red chili powder 1/2 teaspoon
  • Parsley —1/4 teaspoon

Marinara sauce:

  • Saute garlic in olive oil and add onion and cook little.
  • Add blanch tomato,tomato ketchup,red chili sauce, oregano, red chili powder and remove from heat and add parsley and basil leaves.
  • Wash and dry mushroom and cut stem. Then chop mushroom stems finely .
  • Saute garlic in butter till brown add capsicums and corn. Stir well on high flame.
  • Do not overcook. Add all other ingredients and remove from heat.
  • Stuff this mixture in mushroom caps and keep mushroom in 180 degree preheated oven for 10 min (till mushroom is cooked properly.)
  • Then pour sauce on it and garnish it with parsley.
