Stir Fried Vegetables in Napolitana Sauce

Ingredients:
- Jalapeno—1 teaspoon
- Basil leaves—–8 to 10
- Olive oil—-2 teaspoon
- Chopped garlic—-2 teaspoon
- Boiled corn—-1/4 cup
- Boiled and chopped baby corn—–3 teaspoon
- Chopped red,yellow and green capsicum—–1 cup
- Diamond shape chopped french beans—–3 teaspoon
- Diamond shape chopped carrot—–3 teaspoon
- Boiled and chopped big pieces of broccoli—–1 1/2 teaspoon
- Par boiled mushroom—2 teaspoon
- Salt to taste
- Pepper powder—1/4 teaspoon
- Chili flakes—-1 1/2 teaspoon
- Oregano —–1 teaspoon
Ingredients for Napolitana sauce:
- Olive oil –1 1/2 teaspoon
- Chopped garlic—1 1/2 teaspoon
- Tomato puree—-1 cup
- Red chili paste—-1 teaspoon
- Mixed herbs—1 teaspoon
- Tomato ketchup—1 1/2 teaspoon
- Salt to taste
- Pepper powder—-pinch
- Oregano—1 teaspoon
- Water—-1/4 cup
- Chopped onion—1 teaspoon
- Chopped basil leaves
- Spring onion for garnishing
Serves —4 to 5
Time–20 min
Recipe for sauce:
- Saute garlic in olive oil till it is brown.
- Add onion and saute for few min. Add tomato puree,red chili paste, mix herbs and salt.
- Stir well and add tomato ketchup,pepper powder and oregano.
- Add water and cook for 5 min. Remove from heat. Add chopped basil leaves.
Recipe for veggies:
- Saute garlic in olive oil, add baby corn, capsicums, carrot,french beans, broccoli, jalapeno and mushroom.
- Saute all vegetables on high flame .
- Do not overcook. Crunchy vegetables make the dish very tasty.
- Add sauce in it and stir properly. Garnish with chopped basil leaves and spring onions.
