Spinach Rolls in White Sauce

Ingredients:
- Spinach leaves: 8
- Olive oil: 1 teaspoon
- Finely chopped spinach: 1/2 cup
- Chopped onion: 2 teaspoon
- Chili paste: 1/2 teaspoon
- Chopped garlic: 1 & 1/2 teaspoon
- Boiled and roughly crushed corn: 2 tablespoons
- Chopped capsicum: 1 tablespoon
- Salt to taste
- Pepper powder: 1/2 teaspoon
- Chili flakes; 1/4 teaspoon
- Oregano: 1/2 teaspoon
- Grated paneer(cottage cheese): 2 teaspoons
- Grated cheese: 2 tablespoons( as per taste)
- Chili flakes and pepper powder
- Tomato ketchup for garnishing
Ingredients for Sauce:
- Butter: 1 & 1/2 teaspoons
- Refined flour(maida) : 1 tablespoon
- Chopped onion: 1 & 1/2 teaspoons
- Garlic paste or chopped: 1 & 1/2 teaspoons
- Chopped capsicum: 1 teaspoon
- Baked beans or boiled white beans: 2 tablespoons
- Finely chopped carrot: 1 teaspoon
- Boiled green peas: 1 teaspoon
- Milk: 2 cups
- Sugar: 1/2 teaspoon
- Salt
- Pepper powder: 1/2 teaspoon
Serves: 4
Preparation time: 15 minutes
Baking time: 10 minutes
Preparation:
- Keep spinach leaves in hot water for 2 minutes so that we can roll them easily.
- Heat olive oil in pan add garlic and sauté till little brown in color. Add onion and cook till transparent.
- Add chopped spinach, capsicum, corn and cook for few seconds, add salt, pepper, chili flakes and oregano in the mixture.
- Turn off the heat and leave it to cool. Stuff spinach leaves with this mixture, make rolls and arrange them in baking dish.
- Now to prepare sauce, heat butter till it liquifies, add garlic and sauté till brown in color.
- Add chopped onions, cook for few seconds and then add refined flour and sauté till pink in color.
- Add beans, capsicum, carrot and green peas. Add milk and stir continuously to avoid lump formation.
- Add sugar and pepper powder. When mixture is little thick remove from heat and add salt.
- Pour this sauce on spinach roll sprinkle grated cheese, chili flakes and pepper powder on it.
- Preheat oven to 180 degrees celsius and bake the spinach rolls for 10 minutes till the cheese melts or as per preference.
- Garnish with drop of tomato ketchup.
