Spinach & Corn Pakora

Ingredients:
- Chopped spinach: 1 & 1/2 cups
- Chopped coriander leaves: 2 tablespoons
- Coarsely crushed corn: 1/2 cup
- Chopped fenugreek leaves: 1/2 cup (optional)
- Besan (gram flour): 2 & 1/2 cups
- Rice flour or wheat flour: 3 tablespoons
- Chopped green chili: 1/4 teaspoon
- Curd (yogurt): 2 teaspoons
- Salt to taste
- Red chili powder: 1 & 1/2 teaspoons
- Turmeric powder a pinch
- Asafoetida: 1/4 teaspoon
- Sugar: 1 tablespoon
- Whole coriander seeds: 1/2 teaspoon
- Pinch of baking soda
- Water as per requirement
- Coarsely crushed pepper: 1/4 teaspoon (optional)
- Oil for frying
Serves: 2
Time: 15 minutes
Preparation:
- Mix both flour in a bowl and add all other ingredients and mix properly.
- Add very little water and make thick batter.
- Heat oil in a pan and make round balls from the batter and fry on medium flame till golden and crispy in oil.
- Serve pakora with green chutney and tomato ketchup.
Note: It is very easy and quick recipe.
