Spinach & Corn Pakora

Ingredients:

  • Chopped spinach: 1 & 1/2 cups
  • Chopped coriander leaves: 2 tablespoons
  • Coarsely crushed corn: 1/2 cup
  • Chopped fenugreek leaves: 1/2 cup (optional)
  • Besan (gram flour): 2 & 1/2 cups
  • Rice flour or wheat flour: 3 tablespoons
  • Chopped green chili: 1/4 teaspoon
  • Curd (yogurt): 2 teaspoons
  • Salt to taste
  • Red chili powder: 1 & 1/2 teaspoons
  • Turmeric powder a pinch
  • Asafoetida: 1/4 teaspoon
  • Sugar: 1 tablespoon
  • Whole coriander seeds: 1/2 teaspoon
  • Pinch of baking soda
  • Water as per requirement
  • Coarsely crushed pepper: 1/4 teaspoon (optional)
  • Oil for frying

Serves: 2
Time: 15 minutes

Preparation:

  • Mix both flour in a bowl and add all other ingredients and mix properly.
  • Add very little water and make thick batter.
  • Heat oil in a pan and make round balls from the batter and fry on medium flame till golden and crispy in oil.
  • Serve pakora with green chutney and tomato ketchup.
