Spicy Vegetable Cake (Vegetable Handvo)

Ingredients: (Cooking Time – 25 min, Serves – 2)

  • Boiled and mashed potatoes—-5
  • Chopped mix vegetables—1/2 cup (carrot, corn, capsicum, broccoli)
  • Green mint chutney—2 tablespoon
  • Chilly and ginger paste –2 tablespoon
  • Bread crumbs-2 tablespoon
  • Corn flour–2 tablespoon
  • Tomato ketchup—2 tablespoon
  • Salt to taste
  • Grated cheese–2 tablespoon
  • Pepper powder—1 teaspoon
  • Boiled and crushed peas –1 cup
  • Oil —2 to 3 teaspoon
  • Lemon juice –11/2 teaspoon

Recipe:

  • Heat the oil in the pan add crushed peas and saute for five min,add salt only for this mixture.add chilly ginger paste,lemon juice and remove from heat.add coriander leaves.Keep it in bowl.
  • Add salt and bread crumbs in mashed potatoes.
  • Saute all vegetables in 1/2 teaspoon oil for 1 min.Add salt,pepper
  • Dust oven plate with oil and flour.make layer of mashed potatoes. then apply mint chutney. again make layer of mashed potatoes on it. then apply tomato ketchup on it.Spread vegetables on it and sprinkle cheese.
  • Again make layer of potatoes on it properly and spread peas mixture on it.make. cover this layer with mashed potatoes.Apply oil on all the sides of cake and then coat with bread crumbs. preheat oven at 200 degrees. bake the cake for 20 to 25 min at 200 degree till it becomes brown.
  • You can fry this cake in non stick pan with little oil.
