Roasted Pumpkin Soup

Ingredients: (Cooking Time: 20 minutes, Serves – 4)

  • Pumpkin—200 gm
  • Onion—1 small size
  • Garlic pods—4 to 5
  • Tomato —1 medium size
  • Salt to taste
  • Pepper powder —1 teaspoon
  • Cream—-1/2 tea spoon
  • Roasted cumin powder –1/2 teaspoon
  • Coriander leaves–1/4 teaspoon
  • lemon juice 1/4 teaspoon

Recipe:

  • Cut pumpkin in thin slices and roast in non stick pan. Add garlic and onion and roast with it for ten min.
  • See to it pumpkin is cooked well and burnt flavor comes out.
  • Remove from heat. Add tomato and crush with handy mixture. Strain it and keep it for 5 min boiling.
  • Add salt, pepper and cumin powder.
  • Add 1/4 tea spoon lemon juice and garnish with coriander leaves.
