Roasted Pumpkin Soup

Ingredients: (Cooking Time: 20 minutes, Serves – 4)
- Pumpkin—200 gm
- Onion—1 small size
- Garlic pods—4 to 5
- Tomato —1 medium size
- Salt to taste
- Pepper powder —1 teaspoon
- Cream—-1/2 tea spoon
- Roasted cumin powder –1/2 teaspoon
- Coriander leaves–1/4 teaspoon
- lemon juice 1/4 teaspoon
Recipe:
- Cut pumpkin in thin slices and roast in non stick pan. Add garlic and onion and roast with it for ten min.
- See to it pumpkin is cooked well and burnt flavor comes out.
- Remove from heat. Add tomato and crush with handy mixture. Strain it and keep it for 5 min boiling.
- Add salt, pepper and cumin powder.
- Add 1/4 tea spoon lemon juice and garnish with coriander leaves.
