Quinoa Broccoli Kebabs

Ingredients :

  • Boiled quinoa : 1/4 cup
  • Boiled and mashed potato : 3 medium size
  • Chopped broccoli : 1/2 cup (200 gm)
  • Chopped spinach : 1 cup
  • Chopped coriander : 1/4 cup
  • Chopped onion : 3 tablespoons
  • Chopped garlic : 2 teaspoons
  • Chopped ginger : 1 & 1/2 teaspoons
  • Green chili paste : 2 teaspoons
  • Lemon juice : 1/2 teaspoon
  • Chopped spring onion : 2 teaspoons
  • Garm masala : 1 teaspoon
  • Corn flour : 1 & 1/2 teaspoons
  • Refine flour : 1 & 1/2 teaspoons
  • Salt to taste
  • Oil : 2 teaspoons
  • Extra oil for frying : Based on your preference
  • Bread crumbs : 3 tablespoon for stuffing
  • Bread crumbs for coating
  • Cumin seeds : 1 teaspoon
  • Chaat masala : 1/2 teaspoon
  • Water
Serves : 10 pieces
Preparation time : 15 minutes
Cooking time : 15 minutes
Preparation:
  • In a cooking pan add 2 to 3 tablespoons of oil and heat it.
  • Add add cumin seeds to the pan, when they crackle add garlic and ginger.
  • Sauté them for few seconds  then add onion  and cook until golden brown in color.
  • Add broccoli, spinach and cook on high flame.
  • Add little salt and stir constantly. Check broccoli if cooked then add quinoa and sauté for few seconds.
  • Add chili paste, potato, garam masala and remove from heat.
  • Add lemon juice, coriander powder and mix properly.
  • Let it cool down and then add corn flour and bread crumbs. Mix it properly using your hands or ladle.
  • First make round ball from mixture. The shape does not have to be round. You can give them your desired shape.
  • Mix refine flour and water and prepare semi thick batter.
  • Dip the balls in this batter then rub with bread crumbs.
  • Take a frying pan and add oil to it. The amount of oil can be based on your preference for frying the balls.
  • Once the oil is hot, add the balls to the oil and fry them until golden brown in color.
  • Sprinkle chaat masala on them.
