Nutty Quinoa Upma

Ingredients: (Serves – 4, Cooking Time – 10 minutes)

  • Boiled Quinoa–2 cup
  • Curry leaves—5 to 6
  • Mustard seed—1 teaspoon
  • Green chilly paste—-2 tea spoon
  • Ginger paste —–1/2 tea spoon
  • Asafoetida –1/4 tea spoon
  • Roasted pea nuts —-11/2 tea spoon
  • Lemon juice –2 tea spoon
  • Coriander leaves –2 tablespoon
  • Chopped onion——2 tablespoon
  • Boiled and peeled almonds –1 teaspoon
  • Cashew nuts –1/4 teaspoon
  • Finely chopped carrot —2 teaspoon
  • Boiled green peas –2 teaspoon
  • Chopped capsicum –1 teaspoon
  • Without seeds chopped —1 teaspoon
  • Boiled and chopped french beans –1 teaspoon

Recipe:

  • Soak one cup quinoa in one cup water and cook for 5 to 6 min in microwave or up to 2 whistles in pressure cooker.
  • Take oil in heated pan, add mustard seeds.
  • After it crackles add asafoetida , curry leaves, chilly ginger paste and onion.
  • Saute it for 1 minute. Add all nuts, boiled vegetables and salt. Stir well.
  • Add boiled quinoa and lemon juice and stir properly. Remove from heat and garnish with coriander leaves and pomegranate pearls.
