Nankhatai (Cookies)

Ingredients: (Pieces – 18, Cooking Time: 15min, Baking Time: 20min)

  • 150 gm all purpose flour (maida / All purpose flour)
  • 1 tablespoon suji (semolina)
  • 125 gm granulated sugar
  • 100 gm vegetable ghee (dalda) or butter or margarine
  • 1/4 teaspoon soda by carb
  • 1/2 teaspoon baking powder
  • 1 tablespoon yoghurt (curd)
  • 1 tablespoon cardamom powder
  • 10 gm finely chopped almonds

Recipe:

  • Mix together the flour, soda, suji and baking powder well in a bowl.
  • Take ghee and sugar in a bowl and beat until it becomes light and fluffy.
  • Add yoghurt mix well. Gradually add flour mixture and cardamom powder.
  • Mix it properly. Brush the baking tray with butter and dust it with flour. Divide mixture in 18 part, make balls and put almond flake on it and flatten little by pressing.
  • Keep all balls in baking tray. Preheat oven at 180 degrees. Bake for 20 minutes. Check it during baking. Bake until golden brown.
