Mung Vegetable Raita

Ingredients:

  • Curd (yogurt): 1 & 1/2 cups
  • Par boiled mung: 1/2 cup
  • Finely chopped cucumber: 2 tablespoons
  • Raisins: 2 teaspoons
  • Finely chopped carrot: 2 tablespoons
  • Finely chopped capsicum: 1 tablespoon
  • Chopped coriander leaves: 1 & 1/2 teaspoons
  • Chopped green chili:1
  • Salt to taste
  • Sugar: 1 & 1/2 teaspoons( choice)
  • Mustard powder: 1/2 teaspoon
  • Red chili powder: 1/2 teaspoon

Serves: 2
Cooking Time: 10 minutes

Preparation:

  • Soak raisins in hot water for 10 minutes so it becomes soft & remove water.
  • Remove excess water from curd and beat properly.
  • Add all other ingredients and stir properly and garnish with coriander leaves and raisins.

Note: It is very healthy and a quick recipe. It can be eaten as breakfast also.
