Mexican Rolls

Ingredients: (For tortilla)
- Refined flour (maida)—250 gm
- Yellow corn flour (makai aata)—100 gm
- Oil– 1 teaspoon
- Salt to taste
- Oregano–1/2 teaspoon
- Chili flakes –1/4 teaspoon
Ingredients: (For stuffing)
- Boiled and crushed rajma—1 cup
- Boiled corn —1/2 cup
- Boiled and mashed potato—1 big size
- Chopped capsicum –3 tablespoon
- Oregano –2 tablespoon
- Red chili paste –1 1/2 teaspoon
- Garlic paste—2 tablespoon
- Chopped onion —2 tablespoon
- Tomato ketchup—2 teaspoon
- Mexican seasoning—-1 teaspoon
- Salt to taste
- Oil—1 teaspoon
Serves — 6 rolls
Time — 35 min
Recipe:
- Mix both flours, add salt, oil, chili flakes, oregano and make soft dough with water. Rest it for 5 min and roll medium thick tortilla. Roast both side and make soft tortillas.
- Heat oil in pan. Add garlic paste, saute for 1 min. Add onion and cook till little brown. Add capsicums, cook for 1 min then add rajma, corn and mashed potato, stir properly.
- Add red chili paste,tomato ketchup, oregano, Mexican seasoning and salt. Mix properly.
- Take a tortilla and apply maida slurry on all border and put stuffing in middle and make tight roll and press borders to lock properly.
- Then shallow/deep fry it. You can also bake it applying butter or olive oil in preheated oven at 150 degree for 10 min. Serve with cheese dip.
- Note –You can use ready tortillas for this roll.For stuffing one can use green peas, raw bananas also.
