Broccoli in Pumpkin Gravy

Ingredients:

For gravy:

  • Chopped red pumpkin —-200 gm
  • Chopped onion —-1/2 cup
  • Green chili paste —1 1/2 teaspoon
  • Ginger —small piece
  • Red chili powder —–1 teaspoon
  • Coriander leaves —-1/2 cup
  • Chopped tomato —-1 1/2 cup
  • Dry coriander powder —1 teaspoon
  • Cumin powder —-1 teaspoon
  • Chopped garlic —1 teaspoon
  • Ingredients for entree:
  • Parboiled and chopped broccoli(big pieces) ——1 1/2 cup
  • Oil —-1 teaspoon
  • Butter —1 1/2 teaspoon
  • Bay leave —1
  • Cumin seeds —1 teaspoon
  • Curd —2 table spoon
  • Kasuri methi (dry fenugreek leaves) —1 1/2 teaspoon
  • Oil to saute broccoli —–1/2 teaspoon
  • Dry whole chili (sabut chili) —1

Serves —- 4
Time —–25 minutes

Recipe:

  • Take all gravy ingredients in blender and make paste and keep aside.
  • Heat 1/2 teaspoon oil and saute broccoli for one min and remove from heat.
  • Heat oil and butter in pan, add cumin seeds , bay leave and dry chili.
  • Add paste and saute for 10 min till pumpkin is properly cooked.
  • Then add 1/2 cup water and boil for few min.
  • Add broccoli and kasuri methi.
  • Beat curd and make it smooth and add in above gravy.
  • Stir properly and remove from heat.
  • Garnish with coriander leaves and fresh cream.
