Bottle Gourd Kachori (Lauki,Dudhi)

Ingredients:

  • Grated lauki—1 cup
  • Crushed green peas—–1 cup
  • Grated paneer—-2 tablespoon
  • Chili ginger paste—-11/2 teaspoon
  • Sesame seeds—–2 teaspoon
  • Lemon juice —-1 1/2 teaspoon
  • Grated fresh coconut—-1/2 teaspoon
  • Chopped cashew nuts —1/2 teaspoon
  • Coriander leaves —-2 tablespoon
  • Raisins—1/2 teaspoon
  • Wheat flour —1 cup
  • Maida —1/2 cup (optional) you can use only wheat flour
  • Oil —3 tablespoon
  • Salt to taste
  • Sugar –1 teaspoon (optional )
  • Oil for fry
  • Water for dough

Serves —–Medium size -8 kachori
Time —35 min

Recipe:

  • Heat oil in pan, add asafoetida and grated lauki. Cover and cook for 5 min.
  • Add green peas and saute it. Add salt, sesame seeds, chili ginger paste, sugar, cashew nuts and raisins.
  • Mix properly and remove from heat. Add paneer and lemon juice.Let it cool then add coriander leaves.
    Mix both flour .
  • Add salt and oil.Mix it properly then add water and make little hard dough.
  • Divide in 8 parts and roll medium puris and stuff above mixture and shape it. Fry all kachori on slow flame till little brown. Serve with green chutney and tomato ketchup.
