Black Beans Soup with Salsa

Ingredients :
- Black beans —-1 1/2 cup
- Bay leaf –1
- Oil —1 teaspoon
- Chopped garlic —–2 teaspoon
- Roasted cumin powder —1 teaspoon
- Chopped onion —–2 teaspoon
- Red chili powder —1 teaspoon
- Green chili –1 (optional )
- Salt to taste
- Pepper powder —1/4 teaspoon
- Oregano —1/4 teaspoon
- Fresh cream —–1 1/2 teaspoon
Ingredients for salsa:
- Chopped tomato —2 teaspoon
- Chopped onion —1 1/2 teaspoon
- Finely chopped capsicum —-1 teaspoon
- Orange segments —2 teaspoon
- Chopped jalapeno —-1/4 teaspoon
- Chopped coriander leaves —-1 teaspoon
- Salt to taste
- Olive oil —1 teaspoon And mix all ingredients properly and salsa ready.
Serves —4 to 6
Time —20 minutes
Recipe:
- Soak black beans over night in water and cook in pressure cooker by adding pinch of salt .
- Mesh beans and add 2 & 1/2 cup water and bay leave. Boil for 5 minutes.
- Heat oil add garlic and saute till it brown. Add capsicum and cook for 2 min.
- Add salt, pepper powder,oregano and roasted cumin powder and red chili powder, remove from heat and add in beans mixture.
- Remove bay leave and crush mixture in blender. Strain the soup and boil for 2 min and remove from gas stove and add cream.
- Pour soup in serving bowl and put salsa on it. Sprinkle coriander leaves & serve.
