Vegetable Quinoa Khichdi (Porridge)

Ingredients:
- Boiled quinoa —–1 1/2 cup
- Boiled yellow lentil (moong dal ) —1/2 cup
- Chopped onion —2 tablespoon
- Garlic paste —2 1/2 teaspoon
- Chopped capsicum —–2 tablespoon
- Lemon juice —-1 tablespoon
- Chili ginger paste —1 teaspoon
- Red chili powder —-1 teaspoon
- Cumin seeds —-1 tablespoon
- Chopped tomato ——1 tablespoon
- Boiled potato cut in cubes —–1 tablespoon
- Par boiled and chopped french beans —-1 table spoon
- Boiled green peas —–1 tablespoon
- Par boiled and chopped carrot —-1 tablespoon
- Roasted pea nuts or cashew nuts —1 teaspoon (optional
- Salt to taste
- Chopped coriander leaves ——2 tablespoon
- Garam masala —-1/4 teaspoon
Serves: 4
Preparation time —10 minutes
Cooking time —-10 minutes
Recipe:
- Cook yellow lentil (do not overcook). Boil quinoa properly.
- Heat oil and add cumin seeds when it crackles add garlic paste and saute for few min .
- Add chopped onion and cook till transparent. Add all other ingredients and stir properly.
- Remove from heat and add chopped coriander leaves.
- Take bowl and grease with oil and fill with above mixture and press little and unmould in serving plate and garnish with pomegranate pearls & serve.
